The harvest is, not doubt, a very important part to asure great quality wines and so Fincas de Azabache takes care of it down to the last detail. Our growers make every effort in the vineyards, all along the year,  in order to obtain high quality grapes that will be the success of our harvest.

The election of the starting date is essential, and this is marked by the maturation of the grapes, the geographic area, the variety of each grape and foremost by the weather conditions, that this year specially have caused the particularity of being the earliest harvest in history in our area.

The two most common used methods to carry out the harvest are: manual and mechanical.

Mechanical harvest, is more economic and fast, as less workers are needed since a harvesting machine does the job.

Manual harvest, is more expensive due to the labour costs, but it is the one we choose in our aim to produce high quality wines, as this type of harvest is a lot more selective and careful.
