It has already started. During this spectacular phase of the grapevine vegetative cycle, the grapes experiment a change of colour. The red varieties are coloured with red and blueish pigments while the whites turn yellow or golden.

This process of maturation will be different according to the grape variety and the weather. The grapes start to gain weight and rise their water and sugar contents, and at the same time they lose acidity and their skin becomes thinner and change colour.

Today there are instruments of measure such as acidimeters or refractometers to control different aspects like sugar, acids, phenolic compounds and the concentration of glycolic acid what will determine the grape's health at their state of ripeness.

The vérasion represent the transition of the grapes from their growth to their ripening. It is truly a crucial moment as it will allow to estimate when to start the harvest.
