NEW VINTAGE OF SPARKLING FINCAS DE AZABACHE
The bottles of our Rioja Quality Sparkling Wine have remained in our subterranean cave that date back from the 50s, in a horizontal position during the Riddling Stage. In this stage the yeasts in the wine lees give to the wine taste characteristics and unctuosity. In our case it covers an ageing time of over 18 months.
When this stage is finished, the bottles that are kept upside down in wooden racks, pass through a manual riddling process where the bottles are turned and repositioned for the dead yeasts to descend to the neck of the bottle
When our oenologist sees that the wine is ready, is time for Disgorging. Bottles stay inverted at a temperature of -22º to -24º degrees Celsius with the objective of freezing the neck, where the lees produced by the fermentation in bottle, stay.
After Disgorging a tiny amount of expedition liqueur, that is a mixture of base wine and suggar, is injected.
And we have our new vintage of DOCa Rioja Quality Sparkling Wine ready for the joy of all bubbles lovers.
